- electronics: Hot metal surfaces oxidize in air during soldering and wet poorly. Soldering in a nitrogen atmosphere cuts the oxidation.
- materials: Melting metal in air lets it react with gases and pick up impurities. Melting it in a vacuum gives a purer metal.
- medical: An injectable drug reacts with the air in its vial and degrades. The air in the vial is replaced with nitrogen for storage.
- everyday: Coffee beans lose their aroma quickly in air. Removing the air from the pack keeps the aroma longer.
